Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper or foil.
In a bowl, mix Parmesan, breadcrumbs, garlic powder, salt, and pepper.
Toss chicken strips in 1 tbsp olive oil, then coat them in the Parmesan mixture. Set aside.
In a separate bowl, toss potatoes, broccoli, and carrots with 1 tbsp olive oil and Italian seasoning.
Spread the vegetables on the sheet pan and bake for 15 minutes.
Remove the pan from the oven, add the chicken strips, and return to bake for another 15-20 minutes until the chicken is cooked through and golden.
