Preheat your oven to 375°F (190°C).
Pound chicken breasts to an even thickness, season with salt and pepper.
Heat olive oil in a skillet over medium-high heat and sear chicken for 3–4 minutes per side until golden.
Transfer chicken to a baking dish. Spoon ranch dressing evenly over each piece.
Sprinkle Parmesan and provolone over the top, then coat with garlic breadcrumbs.
Bake for 15–20 minutes, or until the cheese is melted and chicken reaches an internal temp of 165°F (74°C).
Garnish with chopped parsley before serving.
