Ingredients

  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg, beaten
  • 1/4 cup milk
  • 1 tbsp butter, melted
  • 1/4 cup chopped green onions
  • Oil for frying

Instructions

  1. In a large bowl, whisk together flour, cornmeal, baking powder, salt, and black pepper.
  2. Stir in the corn kernels and chopped green onions.
  3. In a separate bowl, mix the beaten egg, milk, and melted butter.
  4. Combine the wet ingredients with the dry ingredients and stir until well combined.
  5. Heat oil in a skillet over medium heat.
  6. Drop spoonfuls of batter into the skillet and cook for about 2-3 minutes per side, or until golden brown.
  7. Remove and drain on paper towels.
  8. Serve warm with your favorite dipping sauce.
