Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
In a shallow bowl, whisk together breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
In another bowl, beat the eggs.
Dip each chicken tender into the egg mixture, then dredge in the breadcrumb mixture, pressing gently to coat.
Place coated tenders on the prepared baking sheet. Lightly spray the tops with cooking spray for extra crispiness.
Bake for 18–20 minutes, flipping halfway through, until golden brown and the internal temperature reaches 165°F (74°C).
