Ingredients

  • 1 1/2 cups chopped fresh strawberries
  • 1 box (15.25 oz) white cake mix
  • 1 (3 oz) box strawberry Jell-O
  • 4 large egg whites
  • 1/3 cup vegetable oil
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, whisk together the cake mix and dry Jell-O powder.
  3. Add egg whites, oil, milk, sour cream, and vanilla. Mix until smooth.
  4. Gently fold in the chopped strawberries.
  5. Scoop batter evenly into cupcake liners, filling each about 2/3 full.
  6. Bake for 16–20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool completely before frosting.
