Preheat your air fryer to 380°F or your oven to 400°F.
In a bowl, whisk together gochujang, honey, soy sauce, rice vinegar, sesame oil, garlic, and ginger until smooth.
Add chicken thighs and toss to coat. Let them marinate for at least 20 minutes (longer if you have time).
For air fryer: Arrange chicken in a single layer and cook for 18 to 20 minutes, flipping halfway, until cooked through.
For oven: Place chicken on a parchment-lined baking sheet and bake for 25 to 30 minutes, flipping halfway, until caramelized and cooked through.
Sprinkle with sesame seeds and green onions before serving.
