Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup vegetable oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2-3 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, beat the eggs, sour cream, oil, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry and stir until just combined. Don’t overmix unless you like rubbery cake.
  5. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick comes out clean.
