Ingredients

  • 1 ½ cups warm water (110°F to 115°F)
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • ⅓ cup baking soda
  • 1 egg yolk beaten with 1 tablespoon water
  • Coarse salt for topping

Instructions

  1. In a large bowl, dissolve the yeast in warm water and let sit for about 5 minutes until foamy.
  2. Stir in salt, sugar, and flour gradually to form a dough.
  3. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth.
  4. Place the dough in a greased bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
  5. Preheat oven to 450°F (230°C). Line baking sheets with parchment paper.
  6. Divide dough into 12 equal pieces. Roll each piece into a rope and shape into a pretzel.
  7. In a large pot, bring 10 cups of water and baking soda to a boil. Drop each pretzel in for 30 seconds, then remove and place on the baking sheet.
  8. Brush each pretzel with the egg yolk wash and sprinkle with coarse salt.
  9. Bake for 12-15 minutes or until golden brown. Serve warm or store in an airtight container.
