Perfect for those nights when turning on a single extra pan feels like too much. We take a few Italian sausages, some peppers, onions, and roast 'em all until they're golden and sweet. Then comes the honey mustard – not just on the bread, but also drizzled over everything like you're painting a masterpiece. I like mine with provolone, but hey, chase your cheese dreams. Ingredients

  • 4 Italian sausages
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 1 large yellow onion, sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 4 hoagie rolls
  • 4 slices provolone cheese
  • 1/4 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp honey

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the sliced peppers and onions with olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. Nestle the sausages in among the veggies. Roast everything for 25 minutes, flipping halfway through.
  4. While the sausage and veggies roast, mix the mayonnaise, mustard, and honey in a small bowl.
  5. Slice the hoagie rolls and spread the honey mustard mixture inside.
  6. Once the sausage is cooked and the veggies are golden, slice the sausages lengthwise.
  7. Stuff the hoagie rolls with the sausage, roasted veggies, and a slice of provolone.
  8. Return the stuffed sandwiches to the oven for 5 minutes to melt the cheese.
  9. Serve hot and devour immediately.
