Slice the hoagie rolls and spread the honey mustard mixture inside.
Once the sausage is cooked and the veggies are golden, slice the sausages lengthwise.
Stuff the hoagie rolls with the sausage, roasted veggies, and a slice of provolone.
Return the stuffed sandwiches to the oven for 5 minutes to melt the cheese.
