Ingredients

  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 tablespoon granulated sugar
  • 1 large egg
  • 1 cup (240ml) buttermilk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and grated
  • Butter or oil for the pan

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and sugar.
  2. In a separate bowl, beat the egg and mix in the buttermilk, melted butter, and vanilla.
  3. Add the wet ingredients to the dry ingredients and stir gently until just combined. A few lumps are fine.
  4. Fold in the grated apple.
  5. Heat a non-stick skillet or griddle over medium heat and grease with butter or oil.
  6. Pour about 1/4 cup of batter for each pancake. Cook for 2–3 minutes, until bubbles form on top, then flip and cook another 1–2 minutes.
  7. Repeat with the remaining batter.
  8. Serve warm with maple syrup, extra apple slices, or a dusting of cinnamon sugar.
