Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 can (20 oz) crushed pineapple with juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt.
  3. In another bowl, beat the eggs, oil, and vanilla. Stir in the crushed pineapple with all its juice.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined—don’t overmix!
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let it cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely (or slice it warm, we won’t tell).
