Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1/2 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 1/2 cups orzo pasta
  • 2 cups beef broth
  • 1 (8-ounce) can tomato sauce
  • 1/2 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Toss in the onion and garlic, cook until fragrant and soft.
  2. Add the ground beef and cook until browned. Drain off excess fat, but don’t worry if a little stays—it adds flavor.
  3. Pour in the orzo and stir to coat it in all that meaty goodness.
  4. Add beef broth, tomato sauce, cream, and seasoning. Stir well, bring to a boil, then reduce heat and cover.
  5. Simmer for 10-12 minutes or until the orzo is tender. Stir occasionally so nothing sticks.
  6. Remove the lid, stir in the cheddar cheese until melted and creamy.
  7. Taste and adjust seasoning if needed. Sprinkle with parsley if you're feeling fancy.
  8. Serve warm—possibly with a second spoon so no one has to wait their turn.
