Ingredients

For the Crust

  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 3 tablespoons unsalted butter, melted

For the Cheesecake Filling

  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/4 cup heavy cream

For the Topping (Optional)

  • Fresh berries
  • Whipped cream
  • Chocolate drizzle

Instructions

Prepare the Crust

  1. Preheat your oven to 325°F (163°C) and line a 12-cup muffin pan with cupcake liners.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Divide evenly among the liners and press down firmly to create the crust.
  4. Bake for 5 minutes, then remove from oven and let cool.

Make the Cheesecake Filling

  1. In a mixing bowl, beat cream cheese and sugar until smooth.
  2. Add vanilla extract and mix well.
  3. Beat in eggs one at a time until just combined.
  4. Stir in sour cream and heavy cream until smooth.

Bake the Mini Cheesecakes

  1. Divide the cheesecake batter evenly over the cooled crusts.
  2. Bake for 18-20 minutes until centers are set but slightly jiggly.
  3. Allow to cool at room temperature, then refrigerate for at least 2 hours before serving.
