Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, diced
  • 1 cup frozen peas and carrots
  • 1 can (15 oz) diced tomatoes
  • 1/2 cup tomato sauce
  • 1 cup beef broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and garlic, sautéing until soft and fragrant.
  3. Add ground beef and cook until browned, breaking it apart as it cooks.
  4. Stir in diced potatoes, tomatoes, tomato sauce, and beef broth.
  5. Season with cumin, paprika, oregano, salt, and black pepper.
  6. Cover and simmer for 15-20 minutes, stirring occasionally, until potatoes are tender.
  7. Add frozen peas and carrots, stirring to combine. Cook for another 5 minutes.
  8. Serve hot with rice, tortillas, or enjoy it as a standalone dish!
