Ingredients

  • 2 cups mashed potatoes (leftover works best)
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F and lightly grease a muffin tin.
  2. In a large bowl, mix mashed potatoes, cheddar cheese, eggs, Parmesan, flour, garlic powder, onion powder, salt, and pepper.
  3. Spoon the mixture evenly into the muffin tin cups.
  4. Bake for 20–25 minutes until golden brown and crispy on the edges.
  5. Let cool slightly before removing from the tin. Sprinkle with parsley if using.
