Ingredients

  • 1 lb carrots, peeled and cut into sticks
  • 2 tbsp unsalted butter, melted
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix melted butter, honey, garlic, salt, pepper, and thyme.
  3. Toss the carrots in the honey butter mixture until well coated.
  4. Spread the carrots on a baking sheet in a single layer.
  5. Roast for 20-25 minutes, stirring halfway through, until tender and caramelized.
