Preheat oven to 400°F (200°C). Grease a baking dish lightly with olive oil.
In a bowl, toss diced potatoes with olive oil, paprika, salt, and pepper. Spread evenly in the dish.
Bake potatoes for 20 minutes until they start to soften.
Meanwhile, season chicken cubes with salt, pepper, and a little paprika.
Remove potatoes from oven, add chicken cubes on top, then sprinkle with garlic.
Whisk Greek yogurt with parmesan until smooth, then spoon over the chicken and potatoes.
Top everything with shredded mozzarella.
Return to oven and bake for 25–30 minutes until chicken is cooked through and cheese is golden.
Garnish with fresh parsley before serving.
