Preheat oven to 350°F (175°C) and line a muffin tin with liners or grease well.
In a large bowl, stir together all ingredients until just evenly mixed.
Spoon the batter into the muffin cups, filling each about 2/3 full.
Bake for 20–25 minutes, or until muffins are firm to the touch and lightly golden.
Let cool before removing from the tin. Store leftovers in the fridge or freeze for later.
