Cut each string cheese stick in half and freeze for at least 30 minutes.
Preheat oven to 400°F (200°C) or air fryer to 375°F (190°C).
In one bowl, mix almond flour, garlic powder, Italian seasoning, salt, and pepper.
In another bowl, beat the egg.
In a third bowl, place crushed pork rinds or panko breadcrumbs.
Dip each cheese stick into the almond flour mixture, then into the egg, and finally coat with breadcrumbs.
Place coated sticks on a parchment-lined tray and freeze for another 15 minutes.
Lightly spray with cooking spray and bake for 8-10 minutes or air fry for 6-8 minutes until golden and crispy.
Serve hot with marinara or ranch dipping sauce.
