Ingredients

  • 1 lb sirloin steak, cut into bite-sized pieces
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 5 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 8 oz pasta (penne or fettuccine work great)
  • 1/4 cup pasta water (reserved)
  • Fresh parsley, chopped (optional)

Instructions

  1. Season steak bites generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add steak in a single layer and cook until browned, about 2-3 minutes per side. Remove and set aside.
  3. Reduce heat to medium. In the same skillet, add butter and garlic. Stir until fragrant, about 1 minute.
  4. Sprinkle in Italian seasoning and stir in heavy cream. Let it simmer for a minute, then toss in Parmesan until smooth and melty.
  5. Cook pasta according to package instructions. Reserve 1/4 cup of the water, then drain.
  6. Toss cooked pasta into the skillet with the sauce. Add a splash of reserved pasta water to loosen it up if needed.
  7. Add steak bites back to the skillet. Gently mix everything together. Finish with chopped parsley if you’re feeling fancy.
  8. Serve immediately, preferably with a side of stretchy pants.
