In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, beat the egg, then mix in the milk and vanilla extract.
Gradually add the wet ingredients into the dry ingredients, stirring until smooth.
Heat oil in a deep skillet or pot over medium heat (about 350°F).
Drop small spoonfuls of batter into the hot oil. Don’t overcrowd the pan.
Fry until golden brown, turning once (about 1-2 minutes per side).
Remove with a slotted spoon and drain on paper towels.
Dust generously with powdered sugar before serving.
