Ingredients

  • 2 cups cooked rice
  • 2 chicken breasts, grilled and sliced
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Juice of 1 lime
  • 1/4 cup crumbled cotija cheese (or feta)
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the corn, mayonnaise, sour cream, chili powder, garlic powder, smoked paprika, and lime juice.
  2. Season with salt and pepper, then stir in the cotija cheese and cilantro.
  3. Place the cooked rice into serving bowls and top with the grilled sliced chicken.
  4. Spoon the creamy street corn mixture over the chicken and rice.
  5. Garnish with extra cilantro and cotija cheese if desired.
  6. Serve warm and enjoy!
