Preheat oven to 350°F (175°C) and grease a bundt pan.
Cut each biscuit into quarters and place them in a large bowl.
In a separate bowl, mix granulated sugar and cinnamon. Toss biscuit pieces in the mixture until coated.
Layer the coated biscuit pieces in the prepared bundt pan, adding pecans if using.
In a saucepan, melt butter and stir in brown sugar and vanilla. Pour over the biscuit mixture.
Bake for 30-35 minutes or until golden brown.
Let cool for 5-10 minutes before inverting onto a plate. Serve warm and enjoy!
