Ingredients

For the Cake

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup vegetable oil
  • 3 cups grated carrots
  • 1 cup chopped walnuts (optional)

For the Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

For the Cake

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, beat eggs, oil, and vanilla extract until combined. Gradually mix into the dry ingredients.
  4. Fold in grated carrots and walnuts (if using).
  5. Pour batter into the prepared baking dish and smooth the top.
  6. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool completely before frosting.

For the Cream Cheese Frosting

  1. In a large bowl, beat cream cheese and butter until smooth and creamy.
  2. Gradually add powdered sugar, vanilla extract, and salt, mixing until fluffy.
  3. Spread frosting evenly over the cooled cake and serve.
