Ingredients

  • 1½ lbs chicken tenders
  • ¼ cup plain Greek yogurt
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup panko breadcrumbs
  • Cooking spray or a light drizzle of olive oil

Instructions

  1. In a bowl, mix together the yogurt, olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
  2. Add the chicken tenders and toss to coat. Cover and marinate for at least 30 minutes or up to overnight.
  3. Preheat your air fryer to 400°F.
  4. Dredge each marinated tender in panko breadcrumbs, pressing gently so they stick.
  5. Arrange tenders in a single layer in the air fryer basket. Spray lightly with cooking spray.
  6. Cook for 10-12 minutes, flipping halfway, until golden and cooked through.
