Ingredients

  • 1 fresh pineapple, peeled and cored
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup sparkling water
  • Vegetable oil for frying
  • Powdered sugar for dusting
  • Cinnamon (optional)

Instructions

  1. Slice the peeled and cored pineapple into 1/2-inch thick rings.
  2. In a mixing bowl, whisk together flour, cornstarch, baking powder, and salt.
  3. Gradually add sparkling water, whisking until a smooth batter forms.
  4. Heat vegetable oil in a deep pan to 350°F (175°C).
  5. Dip each pineapple ring into the batter, letting excess drip off.
  6. Carefully place into the hot oil and fry until golden brown on both sides, about 2 minutes per side.
  7. Remove and drain on paper towels.
  8. Dust with powdered sugar and sprinkle with cinnamon if desired.
  9. Serve warm and enjoy!
