Peel and cut the potatoes into thin strips.
Soak the potato strips in cold water for at least 30 minutes to remove excess starch.
Drain and pat dry completely with a clean kitchen towel.
Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C).
Fry the potatoes in small batches for about 3-4 minutes until they turn light golden. Remove and drain.
Increase the oil temperature to 375°F (190°C) and fry the potatoes again for 2-3 minutes until crispy and deep golden.
Remove, drain on paper towels, and immediately season with salt, pepper, and optional spices.
Serve hot with your favorite dipping sauce!
