Ingredients

  • 1 pound spaghetti or fettuccine
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Cook pasta in salted water according to package directions until al dente. Reserve ½ cup pasta water, then drain.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.
  3. Add cream, lemon zest, and lemon juice. Stir to combine and bring to a gentle simmer.
  4. Add cooked pasta and Parmesan to the sauce. Toss to coat, adding reserved pasta water a little at a time until desired consistency is reached.
  5. Season with salt and pepper to taste. Garnish with chopped basil or parsley. Serve immediately.
