Ever had one of those days where you're tired, starving, and your brain just screams, “CHICKEN… but make it weird”? Same here 😅. That’s how this Cream Cheese and Bacon Stuffed Doritos Chicken happened. It’s crunchy, cheesy, and wrapped in the kind of bacon hug that makes everything okay for a minute. Think juicy chicken breast loaded with creamy cheese, crispy bacon, and yep — crushed Doritos. Not the salad kind. The glorious snack-food-you-hide-from-the-kids kind. Perfect for weeknights when you want something loud, satisfying, and kinda absurd. It’s not your grandma’s chicken casserole — unless your grandma was wild and had a thing for cheesy chips. So let’s make dinner interesting again, shall we? 😋💥

Ingredients

  • 4 chicken breasts
  • 8 oz cream cheese, softened
  • 6 slices bacon, cooked and crumbled
  • 1½ cups crushed Nacho Cheese Doritos
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • 1 egg, beaten
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F and grease a baking dish like it’s your ex’s voicemail.
  2. In a bowl, mix cream cheese, bacon bits, cheddar, garlic powder, pepper, and paprika until smooth.
  3. Carefully slice each chicken breast to create a pocket — not all the way through. We’re making boats, not halves.
  4. Stuff each pocket with the cream cheese mix. Yes, overfill it a bit. Live a little.
  5. Press the stuffed chicken into the beaten egg, then coat in crushed Doritos like it owes them money.
  6. Place in your baking dish and bake for 25-30 minutes until golden, crunchy, and bubbling with cheesy dreams.
  7. Garnish with parsley if you’re feeling fancy. Or just dig in straight from the pan. No judgment.
