Ingredients

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 lbs potatoes, peeled and diced
  • 1 cup beef broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, cook until fragrant.
  2. Add ground beef and cook until browned. Drain excess fat if needed.
  3. Stir in diced potatoes, paprika, thyme, salt, and pepper. Mix well.
  4. Pour in beef broth, cover, and let simmer until potatoes are tender, about 20 minutes.
  5. Sprinkle shredded cheese over the top. Cover again until cheese melts.
  6. Garnish with parsley and serve hot.
