Coffee Cake Cookies – Sweet Easy Recipes for Cozy Mornings

Some mornings call for something a little extra. You know the kind—the ones where your coffee begs for company, and your breakfast could use a sweet friend on the side. That’s where these Coffee Cake Cookies come in. They’re soft in the middle, slightly crisp on the edges, and dressed in cinnamon-sugar goodness that reminds me of Sunday brunches and lazy holidays. I’ve made these cookies for family gatherings, potlucks, and once—don’t judge—as a ‘breakfast’ when I couldn’t be bothered to toast anything. They’re built on that classic coffee cake vibe, but shrunk into bite-sized joy. Perfect for nibbling between sips, sharing with the neighbor, or hoarding during your favorite Netflix rerun. Whether you’re into air fryer desserts easy recipes or hunting for simple homemade sweets easy recipes, this one checks all the boxes. Sweet? Yes. Easy? Absolutely. Bakery-level good? I mean, come on—try it and tell me I’m wrong.

Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Cream the softened butter and sugar together until light and fluffy. Add the egg and vanilla extract. Mix until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and stir until a dough forms.
  4. In a small bowl, mix together the brown sugar and cinnamon.
  5. Scoop dough into tablespoon-sized balls. Roll each one in the cinnamon-sugar mixture, then place on a lined baking sheet.
  6. Gently flatten the tops of each dough ball and drizzle with melted butter.
  7. Bake for 10–12 minutes or until the edges are just golden. Let cool before devouring—or don’t, I’m not your mom.
