In a saucepan, combine water, butter, 2 tablespoons of sugar, and salt. Bring it to a boil.
Reduce heat and stir in the flour with a wooden spoon until a dough ball forms.
Remove from heat and let cool for a few minutes. Then, beat in eggs one at a time until smooth.
Heat oil in a deep skillet to 375°F (190°C).
Spoon dough into a piping bag with a star tip. Pipe 1-inch pieces into the oil, cutting with scissors.
Fry until golden brown, about 2–3 minutes per side.
Drain on paper towels. While still warm, toss in a mix of cinnamon and sugar.
