Preheat your oven to 180°C (350°F). Grease and line an 8-inch square baking pan.
In a large mixing bowl, whisk together both sugars, eggs, oil, and vanilla until well combined.
Add in the flour, cinnamon, baking soda, and salt. Stir until just combined.
Fold in the chopped apples. The batter will be thick and chunky—exactly how it should be.
Pour the batter into the prepared pan and smooth the top.
Bake for 30–35 minutes or until a skewer inserted in the center comes out clean.
Let the cake cool slightly before slicing. It’s heavenly warm, but still great at room temp!
