Ingredients

  • 1 cup cocoa powder (unsweetened)
  • 2 cups granulated sugar
  • ½ cup vegetable oil
  • 4 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup powdered sugar (for rolling)

Instructions

  1. In a large bowl, mix together cocoa powder, sugar, and oil until well blended.
  2. Beat in eggs one at a time, then stir in vanilla.
  3. In a separate bowl, combine flour, baking powder, and salt. Gradually add to the cocoa mixture.
  4. Cover and chill the dough for at least 3 hours (or overnight if you’re a planner).
  5. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. Roll dough into 1-inch balls and coat each in powdered sugar.
  7. Place on baking sheet about 2 inches apart.
  8. Bake for 10-12 minutes. They should look a little underdone in the middle—they’ll finish setting as they cool.
  9. Cool for 5 minutes on the pan before transferring to a wire rack.
