Wash and dry strawberries. Remove stems and hollow out the centers slightly.
In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
Fill each strawberry with the cheesecake mixture using a piping bag or spoon.
Melt chocolate chips with coconut oil until smooth.
Dip the filled strawberries into the melted chocolate, covering halfway or fully as desired.
Sprinkle graham cracker crumbs on top before the chocolate sets.
Place on parchment paper and refrigerate until chocolate hardens.
