Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon chopped chives (optional)
  • Cooking spray or butter for greasing muffin tin

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin with cooking spray or butter.
  2. In a large bowl, combine mashed potatoes, shredded cheddar cheese, Parmesan cheese, eggs, flour, and seasonings.
  3. Mix well until fully incorporated.
  4. Spoon the mixture into the muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes or until golden brown and crispy on top.
  6. Let cool for a few minutes before removing from the tin.
  7. Garnish with chopped chives if desired and serve warm.
