Ingredients

  • 1.5 lbs (700g) cooked chicken breast, chopped or shredded
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour (or almond flour for low carb)
  • 1 1/2 cups shredded mozzarella
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped chives or green onions
  • Oil for frying

Instructions

  1. In a big bowl, toss together the chicken, eggs, mayo, flour, cheese, garlic powder, salt, pepper, and chives. Mix until it’s a sticky mess (in a good way).
  2. Heat oil in a skillet over medium heat. Not too much—we’re not deep-frying here.
  3. Scoop out heaping tablespoons of the mix and drop them into the hot pan. Flatten them a bit like little cheesy pancakes.
  4. Cook for about 3-4 minutes per side, or until golden brown and cooked through.
  5. Drain on a paper towel, serve hot, and try not to eat them all before anyone else notices.
