In a big bowl, toss together the chicken, eggs, mayo, flour, cheese, garlic powder, salt, pepper, and chives. Mix until it’s a sticky mess (in a good way).
Heat oil in a skillet over medium heat. Not too much—we’re not deep-frying here.
Scoop out heaping tablespoons of the mix and drop them into the hot pan. Flatten them a bit like little cheesy pancakes.
Cook for about 3-4 minutes per side, or until golden brown and cooked through.
Drain on a paper towel, serve hot, and try not to eat them all before anyone else notices.
