Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
In a large bowl, whisk together flour, baking powder, salt, and garlic powder.
In another bowl, beat the eggs, then add milk and oil. Mix until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Fold in 1 cup of shredded cheddar cheese.
Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the remaining 1/2 cup of cheese on top.
Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
Let the bread cool in the pan for 10 minutes before transferring to a wire rack. Garnish with chopped parsley, if desired.
