Cake Mix Toffee Bars – Sweet Easy Recipes for Any Occasion

You ever just stare at your pantry, hoping dessert magically appears? Same here. That’s why I’ve got a sweet spot for Cake Mix Toffee Bars. They're crunchy on the edges, gooey in the middle, and loaded with everything you hoped your last dessert would be—but wasn’t. All you need is a box of yellow cake mix, a bit of butter, a dash of humor (optional, but recommended), and boom—you’re 30 minutes away from people asking for your ‘secret recipe.’ And if they do? Just wink and point at the oven. What I love about this recipe—besides the toffee bits that melt into a caramel-like dream—is that it doesn’t ask for much. No weird tools. No hard-to-pronounce ingredients. Just a baking pan, a spoon, and a bit of enthusiasm. I made these once for a ‘just because’ Tuesday and somehow it turned into a whole tradition. So whether you’re baking for a last-minute get-together, a sugar craving that hit like a freight train, or just want your kitchen to smell like warm, golden heaven, these bars are the answer.

Ingredients

  • 1 box yellow cake mix (15.25 oz)
  • 1/2 cup packed brown sugar
  • 1/2 cup melted unsalted butter
  • 2 large eggs
  • 1 bag (8 oz) toffee bits
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  2. In a large bowl, stir together the cake mix and brown sugar.
  3. Add the melted butter and eggs. Mix until everything comes together. It’ll be thick. That’s a good thing.
  4. Fold in the toffee bits and pecans if you’re feeling a little nutty.
  5. Press the dough evenly into your prepared pan. Use your hands—get in there.
  6. Bake for 25–30 minutes or until the top is golden and a toothpick comes out with a few moist crumbs.
  7. Cool completely in the pan before slicing. (Yes, the waiting is the hardest part.)
