Ingredients

  • 4 bone-in pork chops
  • 2 tablespoons olive oil
  • 3 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the pork chops dry with paper towels. This helps them brown, not steam.
  3. Mix together the brown sugar, garlic, paprika, salt, and pepper in a small bowl.
  4. Rub the seasoning mix all over the pork chops—get in there, don’t be shy.
  5. Heat the olive oil in an oven-safe skillet over medium-high heat.
  6. Sear the pork chops for 2-3 minutes per side until they get a nice golden crust.
  7. Transfer the skillet to the oven and bake for 10-12 minutes or until the chops reach 145°F (63°C).
  8. Let them rest for 5 minutes before serving—yes, really, it’s worth the wait.
