Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium saucepan, combine the water, butter, 1 tablespoon sugar, and salt. Bring it to a gentle boil.
  3. Once boiling, stir in the flour all at once and mix vigorously with a wooden spoon until the dough forms a ball and pulls away from the sides.
  4. Remove from heat. Let it cool for 5 minutes. Then add the eggs one at a time, mixing well after each. Stir in vanilla.
  5. Transfer the dough to a piping bag fitted with a star tip. Pipe 1- to 2-inch pieces onto the baking sheet.
  6. Bake for 20–25 minutes or until puffed and golden. Let them cool for a few minutes.
  7. Toss the warm churro bites in a mixture of cinnamon and sugar until fully coated. Serve warm, preferably with melted chocolate.
