Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Melt the butter in a small skillet over medium heat. Add the chopped apples and cinnamon, and cook until the apples are soft—about 5 minutes.
Roll out the puff pastry and place the brie in the center. Top it with the warm apple mixture and a generous spoonful of salted caramel.
Fold the pastry around the brie like you’re wrapping a cheesy present. Pinch the edges to seal and brush the top with egg wash.
Bake for 20 minutes or until golden and puffy. Let it rest a few minutes before diving in (trust me on this one).
Serve warm with crackers or apple slices. Or just a spoon. No judgment.
