In another bowl, beat the egg.
Dip each chicken breast into the egg, then coat evenly with the Parmesan mixture.
Lightly brush the air fryer basket with olive oil and place the chicken inside.
Cook for 10-12 minutes, flipping halfway, until golden brown and cooked through (internal temperature should reach 165°F).
Garnish with fresh parsley and serve warm.
