Preheat the air fryer to 380°F (193°C) for 3-5 minutes.
Toss the chicken pieces with olive oil, salt, pepper, and garlic powder in a large bowl.
Place the chicken in a single layer in the air fryer basket and cook for 10-12 minutes, shaking the basket halfway through, until golden and cooked through.
While the chicken cooks, combine soy sauce, vinegar, honey, ginger, and garlic in a small saucepan and bring to a boil.
Lower the heat and stir in the cornstarch slurry. Simmer until the sauce thickens, about 2-3 minutes.
Transfer the cooked chicken to a bowl, pour the sauce over it, and toss to coat.
Garnish with sesame seeds and chopped scallions. Serve with rice or vegetables if desired.
