Ingredients

  • 1.5 lbs boneless skinless chicken breast, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ½ cup low-sodium soy sauce (or coconut aminos)
  • 1 tablespoon rice vinegar
  • 1½ tablespoons honey or maple syrup
  • 2 teaspoons fresh grated ginger
  • 1 garlic clove, minced
  • 1½ teaspoons cornstarch + 1 tablespoon water (mixed to thicken sauce)
  • Sesame seeds and chopped scallions (for garnish)
  • Steamed rice or vegetables (optional for serving)

Instructions

  1. Preheat the air fryer to 380°F (193°C) for 3-5 minutes.
  2. Toss the chicken pieces with olive oil, salt, pepper, and garlic powder in a large bowl.
  3. Place the chicken in a single layer in the air fryer basket and cook for 10-12 minutes, shaking the basket halfway through, until golden and cooked through.
  4. While the chicken cooks, combine soy sauce, vinegar, honey, ginger, and garlic in a small saucepan and bring to a boil.
  5. Lower the heat and stir in the cornstarch slurry. Simmer until the sauce thickens, about 2-3 minutes.
  6. Transfer the cooked chicken to a bowl, pour the sauce over it, and toss to coat.
  7. Garnish with sesame seeds and chopped scallions. Serve with rice or vegetables if desired.
